  • 2 1/4 tsp active dried yeast
  • 2 large eggs, at room temperature
  • 1/2 tsp kosher salt
  • 565g all-purpose flour
  • 100g unsalted butter, at room temperature
  • 850g – about four medium apples, peeled, cored, and diced small
  • 30g unsalted butter
  • 80g granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 Tbsp corn starch
  • 125g pecan halves
  • 190g unsalted butter, at room temperature
  • 280g brown sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 115g unsalted butter, at room temperature
  • 225g cream cheese, at room temperature
  • 250g powdered sugar, sifted
  • 12 Tbsp heavy whipping cream
  • 1/2 tsp kosher salt

Instructions

  1. In a mixing bowl, combine lukewarm milk and granulated sugar, then sprinkle yeast over the top and let it froth for 5 minutes.
  2. Whisk together eggs and salt in another bowl; mix in melted butter and yeast mixture, then gradually add flour to form a soft dough.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth; let rise in a greased bowl for about an hour until doubled in size.
  4. Prepare the apple filling by sautéing diced apples with butter, sugar, cinnamon, salt, and cornstarch until tender; set aside to cool.
  5. Preheat oven to 350°F (175°C) and roll out the dough into a rectangle. Spread softened butter over it followed by brown sugar mixture, apple filling, and pecans.
  6. Roll tightly from one end to another and slice into equal pieces; place on a lined baking sheet to rise again for 30 minutes before baking for 25-30 minutes until golden brown.
  7. While baking, prepare cream cheese frosting by beating softened butter and cream cheese together; gradually add powdered sugar and heavy whipping cream as needed.
