  • 2 eggs
  • 1 avocado, sliced
  • 120g ground beef
  • 1 cup cherry tomatoes or 1 roma tomato, chopped
  • 2 tbsp grated manchego cheese
  • 1 tsp chili oil
  • 1 tsp everything bagel seasoning
  • 1 tsp Tajin seasoning (or chili-lime spice)
  • 1 tsp sriracha
  • Salt & pepper to taste
  • 1 tsp olive oil (for frying)

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Add chopped tomatoes and sauté until softened. Stir in grated manchego cheese before removing from heat. Season with salt and pepper.
  2. In another skillet, heat olive oil over medium heat. Crack in the eggs gently and fry sunny side up or over-easy to your liking. Drizzle with chili oil and sprinkle with everything bagel seasoning.
  3. To assemble the bowl, layer the cooked beef mixture at the bottom. Top with sliced avocado seasoned with Tajin and drizzled with sriracha sauce. Place the fried eggs on top and serve immediately.
