  • 2 boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1/4 cup unsalted butter
  • 2 garlic cloves, minced
  • 2 tbsp honey
  • 1/2 cup heavy cream
  • 8 oz fettuccine (or pasta of choice)

Instructions

  1. Cook the fettuccine according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Season diced chicken with Cajun seasoning, salt, and pepper. In a large skillet over medium-high heat, add olive oil and sear the chicken until golden brown (about 6–8 minutes). Remove from the skillet and set aside.
  3. In the same skillet, lower the heat to medium and melt the butter. Add minced garlic and sauté for about 30 seconds. Stir in honey and let simmer for 1 minute. Add heavy cream and stir until smooth; allow to thicken for 2–3 minutes.
  4. Return the chicken to the skillet, toss to coat in sauce, then add drained pasta and mix well. Use reserved pasta water as needed to achieve desired sauce consistency.
  5. Serve hot, garnished with chopped parsley or green onions if desired.
