  • 4 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • Sea salt flakes
  • For the Salty Caramel Sauce: ⅓ cup butter
  • 1 cup brown sugar
  • ½ cup 35% cream
  • ½ teaspoon kosher salt
  • Whipped cream for serving

Instructions

  1. Preheat the oven to 350°F and lightly butter an 11 x 8-inch casserole dish.
  2. Soak chopped dates in scalded milk mixed with baking soda for about 15 minutes.
  3. In a separate bowl, combine flour, baking powder, and salt. Beat the eggs in another bowl.
  4. Blend eggs, dark brown sugar, butter, and vanilla in a food processor until combined.
  5. Gradually mix in dry ingredients and then add the soaked dates along with their liquid until smooth.
  6. Pour batter into the prepared dish and bake for about 30 minutes until set.
  7. While baking, prepare the caramel sauce by melting butter and mixing in brown sugar, cream, and salt until thickened.
  8. After baking, poke holes in the cake and pour one-third of the caramel sauce over it to soak.
  9. Let it rest for about 15 minutes before serving with remaining caramel sauce and whipped cream.
