  • 1 lb sweet potatoes (about 2 medium)
  • 5 tablespoons unsalted butter (softened)
  • 1 cup dark brown sugar
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Boil or bake sweet potatoes until soft, then cool and peel.
  3. For the crust, combine flour, salt, and sugar; cut in cold butter until crumbly. Stir in ice water until dough forms. Chill for 30 minutes.
  4. Mash sweet potatoes and mix with softened butter, brown sugar, eggs, spices, salt, and evaporated milk until smooth.
  5. Roll out chilled dough, fit into pie dish, pour in filling.
  6. Bake for about 90 minutes or until set; cool before serving with whipped cream.
