Ingredients

  • Vegan beef or portobello mushrooms
  • Onion
  • Carrots
  • Celery
  • Garlic
  • All-purpose flour (or cornstarch)
  • Guinness
  • Rutabaga (or turnips)
  • Potatoes
  • Green cabbage
  • Vegetable stock
  • Soy sauce (or Tamari)
  • Salt
  • Pepper
  • Sugar
  • Bay leaves
  • Thyme
  • Rosemary

Instructions

  1. Heat oil in a Dutch oven over high heat.
  2. Sear vegan beef or mushrooms until golden; set aside.
  3. Reduce heat to medium and sweat onions, carrots, and celery until softened.
  4. Add garlic and cook briefly before incorporating flour; stir well.
  5. Slowly pour in Guinness while stirring to avoid lumps.
  6. Add rutabaga, potatoes, cabbage, stock, soy sauce, and seasonings; mix thoroughly.
  7. Bring to a boil then reduce heat to medium-low and simmer uncovered for 45–50 minutes.
  8. Reintroduce seared ingredients 10 minutes before serving.
