  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 60ml sunflower oil
  • 210g dairy-free block butter (for frosting)
  • 200g icing sugar
  • 20ml aquafaba (chickpea brine)
  • Ground Oreo crumbs for decoration

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Mix dairy-free milk and apple cider vinegar; let sit for 5 minutes.
  3. Combine flour, cocoa powder, sugar, baking powder, and bicarbonate of soda in another bowl.
  4. Add sunflower oil to the milk mixture and stir in dry ingredients until just combined.
  5. Line cupcake tin with liners; pour batter into each liner (fill two-thirds full).
  6. Bake for 20-25 minutes until a toothpick comes out clean.
  7. Cool cupcakes; beat together dairy-free butter and icing sugar, then add aquafaba for frosting consistency.
  8. Frost cooled cupcakes, sprinkle with ground Oreo crumbs, drizzle melted dairy-free chocolate, and decorate with white chocolate buttons and Oreos.
